I'm going to be using it to make some sail panels in the next few days. I'm going to try to match the OEM texture which is pretty fine. Any tips or tricks? School me please.

I've done quite a bit of work with SEM to try to match OEM finishes. The best news about SEM is that there is a lot of material in the can, so before you attempt a small interior job you can do lots of experimenting.
Overall painting tips that apply:
Give yourself room to work
Lay the parts flat on the floor
Don't rush re-coat times
Tips specific to SEM:
Experiment with distance from spray tip to part.
Experiment with short bursts vs. heavy coats.
With the right technique you can get quite a variance in finishes, from fine stipple (One coat, medium pressure, far distance) to rough pebble (multiple coats, light pressure, close distance).
