For some reason there a massive dip at around 500HZ of the signal coming out of my factory HQ, the bass seems to be fine with no roll off.
What could a reason for a dip at this particular point? I have read its common to cut bass but why here?

The factory radio was likely set that way because it was considered as part of a system: radio, amplifier, speakers, doors, car interior, listening position, sound treatments (if any), and whatever else. There might have been something offensive at 500hz that would otherwise be a problem, and it might have been easier to reduce it in the radio signal than attack it a different way.
If you have the ability, a simple experiment would be to bring back that 500hz content and see what it sounds like.
It's a little like asking "why does grandma always cut the ends off the ham when she cooks it?" and the answer only makes sense when you realize the rest of the system because the answer was "so the ham would fit into her pan which was kinda small".
Measure with mics, mark with chalk, cut with torch, grind to fit, sand to finish, paint to match.
