Click the limits box labled 1
Set limits of x and y axis appropriately in box with arrow labeled 2. Those are my settings to achieve that window.
Also note, the circled box in the bottom right will set the x-axis to 20hz-20,000hz instantly or 10hz to 200hz.

Second of all, your measurements in general seem way too low. I know the y-axis is semi-arbitrary values, but yours seem really low, especially your midrange from 100hz to 2khz.....Like noise floor low. There is some play in those values and you can simply just change the microphone volume in windows to impact them, but yours seem even low compared to doing that. I would expect to be at least above 60db to have that issue.... At least on any computer I have used, the measurements were still at a minimum above that.
This could be a multitude of different things, wrong setting in REW, wrong setting in windows/mac, wrong gain structure on dsp/amps, too low of HU volume, etc. SO unfortunately, unless you can guarantee that is just do to a simple setting and it doesn't really matter it is hard to tune.
If you measure with nothing on that should be your noise floor, it can also be seen in measurements as the blue circled below. In this example I was about 35db above my noise floor when Measuring.

These are also the settings in my RTA window. I use Pink Periodic (PN) Noise at 64k generated by REW. These settings will only apply if you are using similar periodic pink noise that is 64k.

I'll give those a try. At one point i increased the microphone sensitivity in windows, but maybe it re-set itself.
I'll go out and double check it and run a few tests using your settings. I was just using "pink noise" not Pink PN. is 64k the Sequence Length?

Yes, 64k is the sequence length. Pink PN is the way to go.

Alright, i went out and messed with it a bit. On my laptop the microphone was set to 50, so i maxed it out. I really like that "averaging" a lot better. Not as much going on at once.
I took a measurement of the sound floor (in green, just for reference) and then did the front left 3 ways+subs:

I went ahead and tried to get the Rt tweeter target curve to match up. I went in and selected the tweeter target curve, and gave it an offset till it lined up nicely with my rta, it ended up being about 55db. Is this an ok way of doing it or am i shooting myself in the foot?

Looks better now.
Once you have the measurments, smooth them to like 1/3 octave and tune the speakers based on that to match the curve. Listen for a while and get a better understanding of REW and tuning.
Once you get good with that, you can try smoothing to 1/6 or 1/12 and eq and see if they sound better/worse to you.

On the helix, do you adjust the Q as well or just the db?

Just got done messing with everything. I was able to match the curve nicely except for my Left Midbass. I have a big dip in it and even with it maxed on the helix, i couldn't get it to come up (purple from 60-90hz).

You might need to bump your midbass to sub crossover up to hit that natural fall off more. It is due to acoustical things and nearly every car has them. 90hz-100hz might be better.

When he said "nearside null from 60 to 90hz in the midbass nearest to your seating position" i said "ahh shit, this guy is talking to me!"
I didn't know that that was a thing! both my subs are behind my rear seats, so i cant really move them. i guess i'll lower down the that range so they aren't maxed and live with it.

Or raise your sub and midbass crossover from 80hz or whatever it is to 90 or even 100hz.
Mine is currently at 100hz and not one person has mentioned my sub is crossed too high. They can't tell. The frequencies are too low still.
